Ingredients

  • 3 teaspoons olive oil, divided

  • 1 pound boneless chicken breasts

  • Salt and freshly ground pepper

  • 1/4 cup chopped onion

  • 1 cup orzo

  • 2 cloves garlic, minced

  • 2 1/3 cups low sodium chicken broth

  • 1 cup fresh asparagus, chopped into 1 inch pieces

  • 3 to 5 ounces fresh spinach

  • Zest and juice of 1 lemon

  • 1/2 cup shredded Parmesan cheese


Instructions

  1. Heat 2 teaspoons olive oil in a large skillet over medium heat. Season chicken with salt and pepper and sauté until cooked through. Remove from skillet and set aside.

  2. Add the remaining teaspoon of olive oil to the pan. Sauté onion until softened. Stir in orzo and garlic and cook for 1 minute.

  3. Add chicken broth and bring to a boil. Cover, reduce heat, and simmer for 5 minutes.

  4. Add asparagus and cook for an additional 5 minutes until tender.

  5. Stir in spinach and cook until wilted. Remove lid and cook uncovered until excess liquid evaporates.

  6. Return chicken to the skillet. Stir in lemon zest, lemon juice, and Parmesan cheese. Season with salt and pepper to taste.
