Grilled Lamb Lollipops with Herbed Tomatoes & Garlic Parsley Sauce

Grilled Lamb Lollipops with Herbed Tomatoes & Garlic Parsley Sauce
Ingredients
- 3 pounds lamb chops, frenched
- Salt & freshly ground pepper
- 4 cups fresh parsley leaves, stems discarded (or a mix of tender herbs like basil, dill, or cilantro)
- 10 cloves garlic, roughly chopped
- ⅔ cups olive oil
- ⅔ cup red or white wine vinegar
- 2 pounds small tomatoes, halved or quartered, depending on size
- 1 jalapeño, finely diced
- ¼ cup pitted castelvetarono olives, smashed and roughly chopped
Directions
Pull the lamb chops out of the refrigerator to temper. Pat dry, and season on both sides with salt and freshly ground pepper. Set aside.
Heat the grill to high.
Add the parsley leaves and garlic to a food processor, and pour in the oil and vinegar. Pulse 4-5 times in the food processor until incorporated but not over blended.
Add 3 tablespoons of the garlic parsley sauce to a medium bowl. Stir in the tomatoes olives, and pepper, season to taste with salt & freshly ground pepper. Set aside.
When the grill is hot, add the lamb and cook for 3-4 minutes per side until your desired doneness. Remove to a platter to rest for 5 minutes while you assemble the rest of dinner.
Spoon the tomato salad over a medium platter. Arrange the grilled lamb on top, and drizzle with the reserve parsley & garlic sauce.
Serve immediately, with hearty pours of Sleeping Lady Cabernet Sauvignon in your glass. Enjoy!
