Apricot & Mint Crostini with Ricotta and Malvasia Bianca
Honey sweet and sticky apricots are the first stone fruit of spring, so are a perfect complement to the orchard-forward nature of the silky Malvasia Bianca on the palate. Wrap the crostini with thin slices of prosciutto for salt and texture. We love this app because it comes together in just a few minutes, and you can use any stone fruit that looks good at the farmer’s market, or in a pinch, it’s lovely with jams or lemon curd from the pantry.
Ingredients
1 baguette, thinly sliced into crostini, about ¼ inch
Olive oil
Salt & freshly ground pepper
6 oz fresh ricotta
1-3 apricots, pitted and thinly sliced
4 sprigs of mint, leaves picked
4 ounces prosciutto, sliced into strips
Directions
Heat the oven to 450F. Line a sheet pan with parchment paper. Arrange the sliced baguette in an even layer, drizzle with olive oil, salt, and freshly ground pepper on both sides.
Transfer to the oven to toast until lightly crisp and golden, 6-8 minutes.
Dollop each toast with about a tablespoon of ricotta. Top with a slice of fruit, a mint leaf, wrap in the prosciutto, and arrange on a serving tray. Dig in and get ready to celebrate a new season!
