This beautiful example of Calistoga Cabernet Franc exhibits juicy black raspberry fruit contrasted by under tones of green olive and savory herb. Enjoy this luscious wine with grilled pork chops, roasted leg of lamb, and grilled eggplant.
The majority of the Cabernet Franc fruit for this wine was sourced from the Tamagni Vineyard in Calistoga, a vineyard that has long been associated with Sterling Vineyards. The vineyard’s decomposed stone soil combined with the long, moderate growing season of 2014 led to even ripening and complex flavor development. Fermented in stainless steel tanks, the wine was then aged in a mixture of new and used French oak (56% new) from different cooperages providing the winemakers a palette of different expressions with which to blend.
Although California’s continued drought brought another dry winter, the growing season started with a warm, dry spring and relatively early bud break. Summer temperatures remained mild and consistent with even, warm temperatures throughout. The overall quality and expressive fruit characteristics make this an outstanding vintage.
Historically a Bordeaux blending varietal, Cabernet
Franc has a distinct personality of its own. We wanted
to craft a wine that showcased its characteristics.
We began by hand-harvesting the fruit in the cool
hours of the day. After the grapes were destemmed
and crushed, we used a process called saignée,
which bleeds off a portion of the juice prior to
fermentation, allowing for an increased ratio of skins
to juice and ultimately a greater intensity of flavors.
