For our Cellar Club Syrah, we wanted to showcase the varietal’s subtle flavors in a deep and dark, yet gentle, wine. We find the allure of Syrah lies in the meaty-spicy element that weaves through the dark fruit core. To preserve these characteristics, we hand harvested the fruit at the peak of maturity. This was followed by a pre-fermentation cold soak for gentle extraction of delicate varietal nuances. Because Syrah is inherently spicy with good tannin structure, we chose to age the wine in older French, American and European oak barrels, thereby placing the focus on the fruit.
