Mini Filet Mignon Wellington Bites with Horseradish Crème Fraîche

2017 Platinum Napa Valley Cabernet Sauvignon is a perfect match for these rich, umami packed mini filet mignon bites. Take the stress out of the traditional preparation of Beef Wellington and opt for this festive appetizer recipe that is sure to be a hit for all your holiday entertaining this year.

Ingredients

8 oz fresh mushrooms, trimmed and roughly chopped
1 small shallot, roughly chopped
2 cloves garlic, roughly chopped
1 tablespoon butter
1 teaspoon Dijon mustard
Salt & freshly ground pepper
1 - 12-16 ounce filet mignon steak, fat trimmed and cut into 1 inch cubes
Vegetable oil
Non-stick cooking spray
1 - 14 ounce sheet puff pastry
½ cup crème fraîche
1 tablespoon prepared horseradish
Fresh thyme springs, for garnish

Directions

Pre-heat the oven to 400 F°. Add the mushrooms, shallot, and garlic to a food processor and pulse until a paste forms. Warm the butter in a medium skillet over medium-high heat. Add the mushroom paste and cook until fragrant and the liquid has evaporated, 5 minutes. Transfer to a bowl.
Pat the steak cubes dry and season with salt & pepper. Warm a cast-iron pan over medium heat until smoking, 5 minutes. Add vegetable oil and steak cubes and quickly sear until browned, about 1 minute per side (the steak will not be fully cooked, it will finish cooking in the oven. Transfer to a plate and set aside.
Grease a standard-size muffin tin with cooking spray. Lightly flour a work surface with flour. Roll out the puff pastry to a 12x15 inch rectangle. Cut the pastry into 12 - 3 inch squares. Press each square into the wells of the muffin tin (if the pastry becomes sticky or hard to work with at any point, quickly transfer to the freezer for a few minutes to firm). Dollop the bottom of each muffin well with about 1 teaspoon of the mushroom mixture. Top with a cube of steak. Transfer to the oven and bake until the pastry is puffed and golden, 20-22 minutes.
While the Wellingtons cook, whisk the prepared horseradish into the crème fraîche and transfer to a small bowl.
When the wellingtons are done, carefully transfer to a serving platter, sprinkle with thyme, and serve with the horseradish crème fraîche for dipping and drizzling.
