Soak the skewers in warm water for 15 minutes. Preheat the oven to 425 F°. Line a sheet pan with parchment or aluminum foil. Use a microplane to grate the garlic in a large bowl. Add the olive oil and spices and whisk to combine. Add the shrimp to the bowl and toss to combine. Set aside for 15 minutes to marinate.

Thread the shrimp onto the soaked skewers and arrange on the prepared pan in a single layer. Transfer the pan to the oven and roast until the shrimp are pink, firm, and opaque, 6-8 minutes. Arrange the shrimp on a platter and sprinkle with the parsley. Serve with the lemons on the side for squeezing.
